The index is straightforward, allowing you to find recipes by key ingredients as well as by type of dumpling, bao or noodle. He’s a true legend for very good reason and it definitely rankled to see his work dismissed in that way.
The other thing that doesn’t sit well with me and that’s not Pippa’s fault is that seemingly there’s a huge demand for people like her and whitewashed Asian recipes. Use chopsticks to encourage the noodles to come loose and cook, but try to leave the gyoza undisturbed as much as possible (we don't want them to break). People now cook Asian cuisines at home regularly, once-difficult-to-find ingredients are readily available, we eat out often at far more authentic, regional Asian restaurants, and a higher number of us travel overseas, getting to know cuisines in their countries of origin. Pippa is known by most as her Instagram handle - Pippy Eats - where she showcases her favourite recipes, most of which contain noodles!And her book is everything I wanted it to be: a glorious invitation and accessible primer, full of deliciousness. this weekend ‘beef honey garlic noodles’ – so ended up using some ramen noodles from the back of the cupboard which soaked up the sauce beautifully! Oh thank you, Madeleine, both those conversations sound really interesting, I shall add both to my list of things to watch soon. Yes the way that food publishing is STILL so skewed against authors of colour is hugely disappointing. You’ll see so many IGers fawn over these recipes because it’s in a cute book and it’s comfortably represented by a person that looks like them.
Noodle dishes in this chapter include wok-fried noodles with beef and pak choi, breakfast yakisoba, Singapore mei fun rice noodles, Taiwanese fishing dock noodles, zha jiang mian (fried-sauce noodles), cumin lamb biang biang noodles, dan dan noodles, kick-ass tofu skin mala noodles, cold sesame noodles, chilli crab noodles, hangover noodles (charred broccoli soba), yuzu shio ramen, miso clam ramen, ox cheek mala xiao mian, Hong Kong wonton noodle soup, Chongqing noodles, and curry udon (amongst others). The way I like to do it is roll the dough into a ball, and then start flattening it out with the rolling pin. Recently released Dumplings and Noodles by Pippa Middlehurst has been the subject of some controversy since it was published, and I can’t give a comprehensive review without touching on reasons for that. One of the best things about this dish is that you really can make a lot of food without spending much.
At its heart, this remains a review of the cookery book from a reader, cook and greedy person’s perspective. After moving the mess around for a while it should start to get clumpy looking, and begin taking shape. This is a ramen style noodle soup recipe which creates a really tasty dinner out of some veggies, noodles and frozen gyoza, with endless flexibility for you to play around.
