Description

When used with harder ingredients, a fine grater produces powder-like results that pack an intense flavor. Often, when I use a rasp (again, rectangular teeth) I get to a point where ginger pieces are stuck to the backside, the holes are clogged up, and no more ginger will grate no matter how many times I run the root up and down the plank.

When I first used the tool, I marveled at the pile of fluffy ginger it produced—so much so that I grated too far too fast and nicked my finger, which leads to the second reason why I love the tool. The rasp-like tool features a knob on the side to quickly remove the peel of knobby, fresh ginger root. It's nothing revolutionary, but if you use it instead of a spoon, you're dirtying one less piece of equipment. You could find a place for this tool in any drawer—or, since it has a small hole at the end, any hook—in your kitchen. To a lesser degree, the size of the grating surface also helped determine speed: The larger the area, the more ground we could cover before starting a new stroke or before the ginger clogged the holes. My experience with this is that the fibrous part mostly remains on the piece I’m grating so only the soft pulp and juice are in the dish. You may not bleed as much as you would if you cut yourself on a Microplane, but my skinned knuckle is proof that ceramic graters are not entirely pain-free.

So while I'll hold onto my zester for when I need to trim frozen cake and my ribbon grater for whenever I'm feeling fancy, I have a feeling my ginger tool is bound to become a new essential for quicker, cleaner, more ginger-loaded weeknight cooking. When sautéed in oil as if for a stir-fry, different ginger samples cooked evenly and in roughly the same amount of time, and their flavor and texture were nearly indistinguishable from sample to sample.

This product has been classified as essential item by the New Zealand Government and can be purchased and delivered during lockdown. Grating works fine, but it seems as if the youtube cooks grate the ginger especially in no time, and for me it takes quite some minutes (cause its frozen and I keep adjusting my grip to not freeze my fingers off, and then sometimes its not quite the right angle so barely anything gets grated off).
