There’s been some chatter here and there that the Sette grinders aren’t good for anything but espresso. I’ve heard it from cafe owners, home baristas and enthusiasts; Baratza has heard it too. I’ve talked extensively in this article about the burr geometry of the Etzinger burrs inside the Sette 30, and how the production of fines increases the coarser you go. The thing is, is that a bad thing? I also think that single-dosing is much more appealing than weight-based dosing, so again that makes it much easier to choose. As covered extensively in the previous section, the Sette 30 only has one grind adjustment, the same “macro” adjustment from the 270 series. So there’s not much to play with there in terms of dialing in espresso. But at least you can jump the setting up to moka, pourover, siphon, auto drip and chemex grind levels.

Grind coffee in the Sette 30 at 3 different settings: espresso (target is 350um), fine siphon coffee grind (target is 600um) and Chemex (target is 800um). With a base measuring just 13 x 23.8 cm, you’ll find it’s slim enough to slide between other appliances on your counter. The 39.7-cm height might be too tall for some cabinets, though, so be sure to measure before you buy.Meanwhile, Baratza has continued innovating with a range of grinding options, more recently introducing the stunning Vario W+, a fully integrated real-time weight-based grinder. So, each grind setting has a further 9 micro-adjustments from coarser to finer and represented by alphabets from A to H.

The Baratza Sette 30 AP is a high-quality grinder specialising in fine grinds from entry-level espresso to V60 and AeroPress. And the good news is it can later be upgraded with the micro-adjustment ring, effectively turning it into a “270”. Do Not Buy If… Also, the working of burrs isn’t typical as other grinders; with Sette, it’s the outer burr that spins. Actually, there’s a DC motor system that drives this, resulting in more surface area pulling the coffee through the grinder.See, both grinders work very well with having the same design and grinding technology; that’s why it’s a bit tough to choose one between the Sette 30 and Sette 270. A powerful, high torque DC motor drives the Sette. The circuitry is equipped with an automatically resetting, thermal cut-off switch. When making espresso, it’s essential not to have clumps in your grinds, and the Sette models create incredibly fluffy grounds, which makes distribution a breeze. Sette 270 :The original version. It has 30 macro-settings and an additional nine micro-settings, giving you a total of 270 grind settings. This increased range is better if you want to get the shot timing just right. This model allows you to pre-program three different dose settings compared to only one on the Sette 30.

Sette means ‘seven’ in Italian, and that’s how this grinder is shaped if you look at it from the side. Shaped like a 7 seen from the side The housing of the Baratza Sette 270 is predominantly plastic, but don’t let that put you off – it’s what you’d expect for a grinder in this price range. It keeps both the cost and the weight down, with all of the Sette grinders weighing the same or less than the brand’s entry-level models. There isn’t a standalone pulse button on the panel, but it is possible to grind a bit extra if you haven’t got the timing right. Simply press and hold the start button to bypass the timer – the machine will continue grinding until you lift your finger.

Today Baratza has managed to fix most of these issues except for the gearbox, which tends to fail eventually since it’s made out of plastic. Most users report that it will happen around the two years mark (depending on your use). The machine comes with 31 steps grind settings for fine to coarse grounds. But, Micro settings aren’t available with it like its older brother Baratza Sette 270. On the 30, you set one grind time in hundredth of a second intervals up to ten seconds and then tenth of a second increments for times over ten seconds. So, in Sette 270, it is very easy to make these adjustments by turning any one fork and the other will turn itself.With the straight-thru design, grind retention is very low and again right up there with the best in the business at around half a gram - and it’s often less than that depending on factors like bean type and ambient humidity. And I love the grind quality into a portafilter. Nice and fluffy. Pretty much clump free and even distribution with little to no spill. If noise is a concern, keep in mind the Sette's is a bit louder than other grinders. Here it is with some unofficial noise measurements compared to the Baratza Vario. It’s a little louder due to it’s more open design and higher grinding speed. The Sette 270 has Baratza’s famous “Macro / Micro” adjustment range, one that works much better than the one found on their Vario and Forte models. This gives you a lot more adjustment ability when dialing in espresso. A good coffee grinder is a must-have if you want to brew cafe-quality espresso in your home.
